1 heaping TSP fresh ginger grated, (do this first and the apple and cabbage will get any leftover ginger off the grater
Two gala apples grated, I peeled them first
1/2 cup grated red cabbage
Passion fruit concentrate to taste
Red pepper seeds to taste
Refrigerate an hour or so before serving
The result is a very vibrant, spicy, healthy slaw.
